Vegan Banana Bread

It is official, we are in the bread-baking phase of a pandemic. Following the Körnerbrot, I would like to now present you with this delicious and vegan banana bread :) Use your time at home with baking some goodies, stay healthy and stay sane!

Ingredients:

  • 3 Bananas

  • 120ml Sunflower Oil

  • 80ml Plantmilk (i.e. almond, oat, soy)

  • 1 tsp Vanilla Extract

  • 1 tsp Cinnamon

  • Pinch of Nutmeg

  • 60g Sugar

  • 60g Date Syrup (alternatively, 40g Sugar)

  • 190g Flour

  • 1 tbsp Corn Starch

  • 1 tsp Baking Soda

  • Pinch of Salt

  • 70g Nuts (i.e. walnuts, pecans, hazelnuts)


Method:

  1. Preheat your oven to 160°C

  2. In a large mixing bowl, mash the bananas until fairly smooth. Add the oil, milk, vanilla extract, cinnamon and nutmeg. Mix well.

  3. Next, add the sugar and date syrup to the mashed banana mixture.

  4. In another bowl, combine the flour, starch, baking soda, and salt. Add the dry ingredients to the mashed banana mix.

  5. Finally, chop up the nuts, saving some whole ones for decoration. Mix the nuts into the batter.

  6. Lightly grease a baking tin and fill it with the batter. Use the saved nuts to decorate the cake. Then bake it for about 60-70 minutes. A skewer inserted into the centre of the cake should come out clean.


Note: You might notice that the cake easily falls apart. That is because there is no egg or egg substitute that would normally function to hold a cake together. Just grab a plate and enjoy a thick slice of this delicious banana party :)
