I can't stress enough how much I love these simply delicious two-ingredient pancakes! They're not only super easy to make but also healthy for you and your budget!!

Ingredients:
1 ripe Banana
2 Eggs
(optional) 1/2 tsp of cinnamon
(optional) a handful of blueberries
Topping (optional):
Maple syrup
Lemon juice and sugar
Method:
Mash up the banana with a fork or blender until no larger lumps remain.
Whip up the two eggs and add them to the mashed banana, mix well.
(Optional) add the cinnamon and blueberries and carefully mix once more.
Heat up some butter (about 1 1/2 teaspoons) and using a large spoon, place some of the pancake batter in the heated pan. Cook at medium heat for about 2 minutes per side or until starting to brown.
Serve when hot, and optionally enjoy with some classic maple syrup or a dash of lemon juice and a little sprinkle of sugar
Tipp:
If the bananas are starting to turn brown, they are super sweet and easier to process into a pancake batter. So don't toss the spotty ones, mash them into some sweet breakfast pancakes :D
