Dates are one of my favourite sweet ingredient to anything! Be it brownies, cookies, salads... Dates work anywhere! They are also rich in antioxidants and are so easy to add to your diet. The chickpeas add not only a nutty taste to the whole shabang but also provide a rich source of vitamins, minerals, and fibres. So this is a real superpower salad with all benefits to be derived from all natural ingredients!

Ingredients: (3-4 portions)
250g Quinoa
1 can of Chickpeas
1 package Feta Cheese
4-5 Dates
150g Cherry Tomatoes
Parsley
Peppermint
3 tbsp Olive Oil
1-2 tbsp Balsamic Vinegar
Juice of 1/2 a Lemon
Salt
Pepper
Method:
Cook the quinoa as stated on the packaging.
Drain the chickpeas and chop the dates, tomatoes, parsley and peppermint.
For the vinaigrette, whisk together the olive oil, balsamic vinegar, lemon juice, salt and pepper (to taste).
Leave the cooked quinoa to cool off a little before adding the remaining ingredients to it. The salad tastes best when left to soak for about 20 minutes :) Enjoy!
