Spongy Banana Pancakes

As you may have noticed, I LOVE PANCAKES! This is a new recipe I found and it's sort of a hybrid between the 2-ingredient banana pancakes and the super fluffy ones, which you can also find on this blog :) Super delicious and without added sugar!

Ingredients:

  • 60g Flour

  • Pinch of Salt

  • 1 tsp Baking Powder

  • 1 ripe Banana

  • 1 Egg

  • 2-3 tbsp Milk

  • 1 tbsp Vegetable Oil (or Rapeseed Oil)

  • 1/2 tsp Vanilla Extract

Method:

  1. In a small bowl, combine the flour, salt and baking powder.

  2. In a medium bowl, mash the banana very well using a fork or potato masher. To the banana, add the egg, milk, oil and vanilla and mix well.

  3. Add the dry ingredients to the banana mixture and combine well.

  4. Heat some oil in a pan and bake each pancake on medium heat. Enjoy the pancakes drizzled with PB, maple syrup, or any other topping of your liking!
