Sockeye Bowl

Sockeye is my favourite type of salmon that I always have when visiting my family in Canada! It usually comes from sustainable sources and is not raised in large fish-farms that may be detrimental to the natural environment. When buying fish and meat, generally try to make sure it is from a sustainable source and preferably organic. When it comes to animal products be picky, mindful and remember that you are what you eat.

Ingredients (2 Portions):

  • Sockeye Salmon Filet (organic and sustainable source!)

  • 1 Mango

  • 1 Avocado

  • 1 Chilli

  • 1/2 Cucumber

  • 2-3 twigs of fresh Mint

  • 150g of Rice (uncooked)


For the Marinade and Sauce:

  • 1 tbsp Soy Sauce

  • 1 tbsp Maple Syrup

  • 1 tbsp Sriracha


Method:

  1. Rinse and dry the salmon filet.

  2. Mix the soy sauce, maple syrup, and sriracha together and marinate the salmon in this mixture for about 30 minutes (or more).

  3. Cook the rice as instructed.

  4. Dice up the mango, avocado, and cucumber, and chop up the chilli and fresh mint.

  5. Grill the salmon in a pan. It will take about 5 minutes from each side to be cooked.

  6. Assemble all ingredients in a bowl and mix together another batch of the marinade/sauce to be poured over the bowl. Enjoy! :)
