Savoury Pancakes

Pancakes are not only a meal for the sweet tooth. They are also great when filled with mushrooms, chicken and feta cheese! Or other savoury fillings ;)

Stuffed with chicken, champignons and feta cheese

Ingredients: Pancakes (serves 2)

  • 100g Buckwheat Flour (or normal flour)

  • 200ml Milk (plant milk also works)

  • 2 Eggs

  • A pinch of Salt


Method:

  1. Mix the milk to the flour and whisk until no lumps are left.

  2. Stir in the eggs and salt.

  3. Place the batter in the fridge for around 30 minutes.

  4. Bake in a pan with a little taste-neutral oil or butter.


Some ideas for the filling:

1) Mushroom, Chicken, Feta cheese

Cut a chicken breast into small chunks and marinate in spices (I used Cajun, Paprika, Tumeric) for at least 1 hour. Meanwhile, wash off and dice the mushrooms. Additionally, dice an onion and 1 garlic clove. Heat some oil in the pan and cook the chicken until fully done. Remove the chicken from the pan. Now cook the mushrooms, onion and garlic in the pan, until the onions turn golden and the mushrooms shrink up a little. Cut the chicken into smaller pieces (makes filling the pancakes easier) and mix in with the mushrooms, etc. Turn off the stove and crumble in the feta cheese.


2) Minced Meat

Dice an onion. Heat some oil in a pan and cook the onion until it starts glazing. Add the minced meat, season with spices of your choice, salt and pepper. This filling goes great with some crème fraîche and fresh diced cherry tomatoes.


3) Ratatouille

Preheat the oven to 180°C. Dice up a zucchini, an aubergine, an onion and some cherry tomatoes. Heat some oil in an oven-proof pan (or transfer the veggies to a baking dish later) and cook the vegetables for a few minutes and then place in the oven for about 20 minutes or until the vegetables are cooked.


These pancakes go with almost any filling, so be creative :D Fill it with filling of your choice.
