If it is one of those days that I cannot be bothered to cook an elaborate meal and my fridge is as good as empty, this simple Dal recipe is my go to. It's very "rule of thumbish" and thus very forgiving if an ingredient is not measured in the right quantity. I usually wing this dish with whatever I have left in my pantry.

Ingredients (4 servings):
2 tbsp Coconut Oil
1 Onion
Thumb-sized piece of Ginger
4 cloves of Garlic
2 tsp Garam Masala
1 tsp Turmeric
1/2 tsp ground Cumin
700g Potatoes, hard-boiling
3 large Carrots
250g Red or Yellow Lentils
400ml Coconut Milk
800ml Broth
Some fresh Cilantro
Method:
Peel the onion, garlic and ginger. Dice the onion and finely chop the garlic and ginger. In a large pan, heat the coconut oil and sauté the onion until it turns glassy. Then add the ginger and garlic, and cook for about 3 minutes. Add the masala, turmeric and cumin.
Cut the potatoes into quarters (depending on how large/small the potatoes are: You just want them in bite-sized pieces). Peel and dice the carrots. Add the potatoes and carrots to the pan and cook until well combined with the spices.
Add the lentils, coconut milk and broth to the pan and bring to boil. Let it simmer for about 30 minutes, until both potatoes and lentils are fully cooked and soft. Serve with some fresh cilantro leaves :)
