In case you are out of puzzles and ancient board games to keep you busy during these most unusual times, here's a great recipe to sweeten your day :) Also, please be reminded of how important it is to limit your social contacts and stay at home as much as possible. Think of all the people who are at risk and the health care staff members that are coming to their limits! Let these cookies be a good reason to enjoy some time for ourselves and do things at home that you'd normally not have the time for.
Ingredients (~25 cookies):
200g Flour
50g Starch (I used Corn Starch)
1 tsp Baking Powder
90g Sugar
1 tsp Vanilla Extract
100g soft Butter
1 Egg
1 tbsp Milk
Your favourite Jam (I used Raspberry)
20g Poppy Seeds
Method:
Preheat your oven to 170°C
In a large bowl, mix the flour, starch, 70g of the sugar, baking powder and vanilla extract. Add the butter, egg, and the milk, and use your hands to knead the ingredients into a smooth dough ball.
Sprinkle some flour onto the kitchen counter to prevent the dough from sticking. Now roll the dough into a rectangle of about 30 x 40cm.
Using a spoon, spread the jam on the dough. Mix the remaining sugar and poppy seeds, then sprinkle them evenly over the jam. Start at the longer side, roll up the dough into a sausage, using some pressure to make sure it rolls up nice and tight. Cut the roll into 1cm thick slices and lay them onto a baking tray
Bake the cookies for about 12-15 minutes in the oven and let cool thoroughly :) Enjoy and stay safe!
