Potato Fritter

Best vegetable ever? Potatoes! And the best part about it: without much fuss and within only 20 MINUTES, you can make it into one large potato fritter that you can have with almost anything. In this recipe, I paired it with salmon and capers, but virtually any vegetable and even apple purée tastes delicious with it as a sweet option. So simple, so quick and suuuuper cheap! This gigantic fritter is the perfect student dinner that you can have with anything!


Ingredients (2 Fritters):

  • 600g Potato (hard-boiling)

  • 2 tbsp Olive Oil


Topping:

  • 1 red Onion

  • 2 tbsp Créme Fraiche

  • 2 tsp Horse-radish Cream

  • Handful of Salad Mix

  • Capers

  • 1 Avocado

  • Smoked Salmon


Method:

  1. Peel, wash and grate the potatoes into strips.

  2. Heat two tablespoons of olive oil in a large saucepan and add half the amount of grated potato into the pan. Lightly press down on it to make a compact fritter. Fry for about 7 minutes from each side. (TIPP: To flip the large fritter, place a plate upside down on top of the fritter and flip the pan so that the fritter lies on the plate and you can simply slide it back into the pan to bake the other side)

  3. For the toppings I used, dice up the onion and sauté them alongside the fritter for a while. Place the fritter on a plate and assemble the salad, créme fraiche, horse-radish, capers, salmon and onions on top! Enjoy!

Avocado and Sundried Tomatoes

  • 1 avocado

  • 1 sautéed red onion

  • Handful of sundried tomatoes

  • Handful of fresh tomatoes

  • 2 tbsp Créme Fraiche

  • Pumpkin Seeds

  • Pepper


Apple Purée


Ratatouille


Feta Cheese and Veggies


(Long story short: anything that goes well with potatoes will go well with this fritter) :D
