Poké Ok

This may not be the classic Hawaiian Poké Bowl but this still is a real summer treat! It features the Mango-Avocado-Chilli-Mint Salad and I simply just added some marinated shrimps and rice to the bowl ;)


Ingredients (1 person):

  • 4-5 Shrimps

  • Juice of 1/2 a lemon

  • 3/4 tablespoon Agavesyrup (or liquid honey)

  • 1 tsp Chilli Sauce

  • Pinch of Salt and Pepper

  • 1 Mango

  • 1,5 Avocados

  • Handful of Mint

  • 1 red Chilli Pepper

  • 70g (uncooked) rice

Method:

  1. Peel the shrimps.

  2. In a medium sized bowl, mix together the lemon juice, agavesyrup (or honey), chilli sauce and salt and pepper. Marinate the shrimps in this mixture and keep in fridge while preparing the rest of the meal.

  3. Cut the Avocado and Mango into equally sized chunks and chop the mint and chilli.

  4. Cook the rice (usually in double the amount of water for about 10 - 15 minutes).

  5. Lastly, grill the marinated shrimps in the pan until they turn red.

  6. Assemble your bowl and enjoy this goodie! :D
