Orange-Honey marinated Chicken Drumsticks

This is another great recipe that, once prepared, basically takes care of itself in the oven. Also, it's so easy to make and you can enjoy this recipe as it is, with rice, potatoes or pasta - maybe you'd also like to try it with alternatives like bulgur or quinoa?


Ingredients:

  • 5-6 Chicken Drumsticks

  • Juice of one large Orange

  • 1 tablespoon Honey

  • 1 1/2 tablespoons Agave Syrup (alternatively add another tablespoon of honey)

  • 1 tsp Vadouvan Spice (alternatively chop up 1 small Garlic Clove)

  • optional: 1/4 tsp Garam Massala (!! Spicy)

  • 1 crushed Pepperoncini (or 1/4 tsp chili powder)

  • Salt & Pepper

  • 1 Onion (red ones are stronger in taste)

  • 1 Orange (organic)


Method:

  1. Mix the orange juice, the honey, agave syrup, vadouvan spice (or garlic clove), the Garam Massala (optionally) and the crushed pepperoncini (or chilli powder). Add a pinch of salt and pepper.

  2. Pour this marinade over the chicken and leave to marinate in the fridge for at least 2 hours (you don't have to leave it to marinate this long, but the longer you marinate, the more the chicken absorbs the taste of the sweet orangey marinade).

  3. Heat the oven to 200°C.

  4. Grill the chicken in a pan for about 5 minutes from each or until turning slightly golden already.

  5. Wash the orange, peel the onion and slice both into smaller chunky pieces.

  6. Transfer the chicken and marinade to a baking dish and simply place the onion and orange pieces in between the chicken drumsticks.

  7. Place in oven for about 30-40 minutes, turning the chicken every 15 minutes. When the chicken is starting to turn a gold-brown colour, it should be ready. (The chicken is not allowed to appear shiny glossy pink on the inside anymore). Enjoy! :D
