This is a semolina pudding my grandma would always make me. It's easy to make, delicious warm or cold and always reminds me of my childhood visiting my grandparents. If you're looking for a comforting dessert, this is definitely a go-to recipe! Although it never tastes quite as good as when my Oma makes it herself ;)

Ingredients (serves 4-5):
1l full-fat Milk
100g Semolina (Hartweizengrieß)
50g Zucker
(optional) 1 Egg - yolk and egg white separated - egg white whisked until fluffy
(optional) Zest of 1/2 Lemon
Optional toppings:
Fresh Berries
Jam
Sliced Almond
Maple Syrup
Method:
Mix the semolina and sugar in a small bowl.
In a cooking pot, bring the milk to boil. Reduce the heat to very low and continuously stir while adding in the semolina and sugar mix.
(Optional) Add the egg yolk: Pour some of the semolina pudding (2-4 Tbsp) into a separate bowl and mix it with the yolk. Then stir this into the cooking pot with the remaining semolina pudding).
Stir continuously for 5 minutes, you'll notice the mixture turning into pudding consistency.
Remove from the stove.
(Optional) Add the lemon zest and fold in the fluffy egg white: Place the stiff egg white in the bowl you want to serve the pudding in. Pour the warm pudding over the egg white and begin to fold. It will not be entirely smooth anymore because of the egg white, but therefore nice and fluffly).
Fill the pudding into serving bowls and let cool or serve warm. Top with your favourite topping and enjoy :)
