Oat-Chocolate Cookies

These cookies will fill your home with a warm, oaty, chocolatey smell. I make these cookies for comfort food when it's that time of the semester again but they also make wonderful gifts for birthdays, to say thank you or if you just want to remind someone how much you love them! Obviously, these taste best when fresh out of the oven but their cookie dough is also to die for :D


Ingredients (about 24 cookies):

  • 115g Butter (room-temperature)

  • 85g brown Sugar

  • 1 large Egg

  • 60g Flour

  • 1 tsp Baking Powder

  • 1 pinch of Salt

  • 1/2 tsp Vanilla Extract

  • 115g Oats

  • 175g Dark Chocolate

Method:

  1. Preheat the oven to 170°C.

  2. In a large bowl, whisk the butter until it's creamy. Add the sugar and whisk until the mixture is creamy.

  3. In a small bowl, whisk the egg and add bit by bit to the butter-sugar mix. Thoroughly whisk the mixture.

  4. Combine flour, baking powder, salt, and vanilla extract, and add to the mixture together with the oats and vanilla extract. Roughly chop and add the dark chocolate.

  5. Per cookie use about 1 teaspoon of dough and place on a slightly greased baking pan leaving enough space between the cookies as they will spread a little bit in the oven.

  6. Bake for 12-15 minutes and leave to cool for about 2 minutes before transferring to a cooling rack.
