Honey-Yogurt Polenta Cake

This recipe is also all about polenta cake but it is a little simpler and quicker to make than the previous one :) It has a subtle taste and is perfect to enjoy be enjoyed with fresh fruits and whipped cream!

Ingredients:

  • Zest and juice of 1 Orange (organic and untreated)

  • 200g Polenta

  • 100g ground Almonds

  • 150g Honey

  • 300g Yogurt

  • 5 Eggs

  • 150g melted Butter

Decoration:

  • Orange zest

  • ground Nuts (I used pistachio)


Method:

  1. Preheat the oven to 180°C. Slightly grease a cake pan and line with baking sheets.

  2. Combine the orange zest, juice, polenta, almonds, honey, yogurt and eggs in a large bowl.

  3. Add the butter and combine well.

  4. Pour the batter into the cake pan and bake for about 50-60 minutes until golden brown. When the cake has cooled off, you can sprinkle the decoration on top :) Best enjoyed with fresh fruits and whipped cream!
