Homemade Granola

I woke up this morning and realised: I needed a crunchy breakfast. I stopped buying store-bought granola, because there were too many ingredients that I couldn't agree with... Palm oil is terrible for the environment, unnecessarily added sugar is not good for you and some other preservatives that I prefer not to eat. So I tried, for the first time, to make granola myself. And it was incredibly easy and fast! The amounts are listed by rule of thumb and granola easily forgives too much / little of something, so it really just matters to get it approximately right ;)

Ingredients (to fill a large Mason Jar):

  • ~ 250g Oats

  • ~ 6 tbsp Neutral Oil (i.e. coconut, sunflower, rapeseed)

  • ~ 3 tbsp Honey

  • ~ 3 tbsp Maple Syrup

  • 1tsp Cinnamon

  • 1/4 tsp Vanilla Extract

  • pinch of Salt

  • Nuts (i.e. Pecan, Walnut, Cashew, Pistachio)

  • Seeds (i.e. Sunflower, Pumpkin)

Note: most amounts are given by a rule of thumb - granola is so forgiving, that you can add a little more / less here and there and it won't really make a difference :D


Method:

  1. Preheat the oven to 150°C.

  2. Mix the oil, honey, maple syrup, salt, cinnamon and vanilla in a large bowl.

  3. Add the Oats, seeds and chopped Nuts. Stir well, making sure everything is coated in the oil-honey-syrup mix.

  4. Spread the mixture onto a baking tray with parchment paper (you wont need parchment if your baking tray is 'non-stick' quality).

  5. Toast the mixture for 10-15 minutes. You'll notice that the mixture is not crunchy when it comes out of the oven; The crunchiness comes when the mixture has cooled off. You want to make sure to not toast it too long or at too high temperature as it will taste like burned popcorn.

  6. Once your granola has cooled off completely, keep it an airtight container, preferably in the fridge. It can stay there for about 2-3 weeks :) Enjoy!
