Fitness Pancakes (Plain, Apple or Blueberry)

Guilty pleasures that you don't have to feel guilty about. These gluten-, dairy- and sugar free pancakes are a wonderful alternative to their sugary pancake siblings - especially if you have an insatiable sweet tooth but don't want to lose gym progress :D They only require 4 ingredients and are whipped up and ready to serve in no longer than 15 minutes.


Ingredients (for 2 people):

  • 2 Eggs

  • 150ml Almond Milk (normal milk works too)

  • 130g Buckwheat Flour (you can also use half buckwheat half normal flour)

  • 1 tsp. Baking Powder

  • (optional) 1/4 tsp. Cinnamon

Method:

  1. Whisk together the eggs and the milk.

  2. Gradually add the flour, baking powder, and (optionally) the cinnamon, to the mixture. Whisk well. The batter should be thick but fluid enough to be poured easily. If it is too thick and sticky, add some almond milk. If it is too liquidy, add some flour.

  3. In a frying pan, heat some vegetable oil (butter, coconut oil or ghee work fine too) and bake the pancakes from each side.

  4. Enjoy with whatever topping you like!


Other Options:

  1. Apple Pancakes: Slice an apple thinly. Pour some Pancake battter into the pan and place the apple slices into the still uncooked batter. Flip the pancake and cook until apples turn slightly golden-brown

  2. Blueberry Pancakes: Pour some batter into the pan and place some blueberries onto it.
