Crispy Chicken Nuggets

An absolute classic! And so easy to make yourself. Some days I just want to sit on the sofa or down for dinner with my better half and indulge in some homemade soul food!


Ingredients: (serves 2-3)

  • 2 Chicken Breasts

  • 2 large tbsp Flour

  • 1-2 Eggs

  • Unsweetened Cornflakes (crushed)

  • Spices (Salt, Paprika, Cajun, Garlic powder)

Method:

  1. Rinse the chicken under cold water and trim tendons from it. Cut into nugget sized strips.

  2. Prepare three bowls: In the first, mix the flour with the spices in the first one (make sure to season the flour well to give a nice taste to the nuggets).

  3. In the second bowl, whisk the egg(s)

  4. In the last bowl, place the crushed cornflakes.

  5. Take each chicken strip and first, dip into and cover evenly with spiced flour and shake off any excess. Then dip swiftly into the eggs and finally roll in the crushed cornflakes.

  6. Heat some heat-resistant oil (i.e. sunflower, rapeseed, olive) in a pan to medium-high heat (you might need to regulate this up and down to make sure the chicken nuggets get golden brown, rather than pale or burnt). The nuggets will take about 3-4 minutes of cooking from each side :)
