Cranberry Salad

In the summer I love to have fresh foods, especially after a workout. This salad is great because it combines something sweet with the savoury yogurt dressing :)


Ingredients (1 person)

  • 2 handful of Lamb's Lettuce (Feldsalat)

  • Cucumber

  • 1 handful Cranberries and/or Raisins

  • 6 Walnuts

  • 1/2 Avocado

  • 150g Sour Cream

  • ~1 tablespoon Balsamic Vinegar

  • Dash of Lemon Juice

  • A pinch of Salt & Pepper

Method

  • Wash the Salad and place it in a bowl.

  • Chop up the cucumber, avocado and walnuts into smaller chunks and add to the salad together with the cranberries.

  • Mix together the sour cream, balsamic vinegar, salt and pepper. Squeeze in some lemon juice to taste and pour the dressing over the salad. Enjoy :D
