Classic Mac n' Cheese

Some evenings just call for a cheesy bowl of Mac n Cheese! This recipe is super easy and quick to make :)

Ingredients (for 2):

  • 250g (uncooked) Macaroni

  • 180ml Milk

  • 1 tablespoon Flour

  • 150g grated Cheese (i.e. Cheddar, Parmesan)

  • Pepper

  • 3 twigs of Thyme

  • 1/3 tsp ground Nutmeg

Method:

  1. Cook the macaroni as instructed on its packaging.

  2. Mix 60ml of milk with flour until no lumps remain.

  3. In a cooking pot, heat the remaining 120ml of milk on medium heat. Once steam starts rising, slowly whisk in the flour-milk mixture and slowly stir until the milk thickens to about the consistency of cream (~2-3 minutes).

  4. Set the heat to low and bit by bit add the cheese and stir until it has fully melted into the sauce. Season everything with pepper, nutmeg and thyme.

  5. Finally, add the cooked macaroni to the sauce and stir until everything is covered with cheese sauce! Enjoy!
