Christmas Granola

It's not long to go until the best time of the year is finally here! Getting together with family and friends for good food and wine, while enjoying the wonderful Christmas decorations and cozy atmosphere - clearly no better season than Christmas. And to make the wait for the christmassy get-together a little less long, why not treat yourself or gift to others a jar of homemade speculaas christmas granola? :)


Ingredients (2 Jars):

  • ~700g Rolled Oats

  • ~2 tbsp melted Coconut Oil

  • ~3 tbsp Date Syrup (alternative: maple syrup, sugar syrup, molasses, agave)

  • ~2 tbsp Maple Syrup

  • ~2 handful of Nuts (I used Pecan and Almonds)

  • ~3 tsp Speculaas / Gingerbread Spice

  • ~1 tsp Vanilla Extract


Note that granola will forgive a little too much of this or too little of that. That's why all ingredients are listed with an approximation :) Feel free to add more or less of each ingredient.


Method:

  1. Preheat your oven to 160°C.

  2. In a small bowl, mix the coconut oil and syrups.

  3. Mix the oats, spices and nuts together and add the oil-syrup mix. Stir well. The granola shouldn't be too sticky to stir but it should be well coated in syrup and oil.

  4. Bake the granola in batches. Thinly spread it out on a baking dish (lined with a baking sheet if it isn't "non-stick"), bake the granola for 18-20 minutes in the oven, and stir half-way through.

  5. Leave to cool completely before transferring it to a sealed, airtight container. It can be kept for 2-3 weeks in the fridge or several months if frozen.
