Choco Cloud Cake

This divine creation is a flourless chocolate cake with a massive pile of whipped cream clouds! This is what I imagine Heaven on Earth to look like. It's a fun cake to make and surprise your friends, colleagues, family or yourself with. Enjoy this chocolate bomb in its creation and when you devour it.

Ingredients (Cake Pan ~23cm)

  • 250g Dark Chocolate

  • 125g soft Butter

  • 2 Eggs whole

  • 4 Eggs, whites and yolks separated

  • 160g Sugar

  • Zest of 1 Orange (organic!)

  • 400ml Heavy Cream

  • 1 package Vanilla Sugar

  • Unsweetened Cocoa Powder for decoration


Method:

  1. Preheat your oven to 180°C. Line the floor of the cake pan with baking sheet.

  2. In a hot water bath, melt the chocolate. Then add the butter and mix until smooth.

  3. In a large bowl, whip together the 2 whole eggs, the 4 egg yolks and 60g of the sugar until the mixture is foamy. Add the chocolate-butter-mix and the orange zest, and stir until smooth.

  4. In a separate bowl (best to use a metal or glass bowl) whip the egg whites with a clean whisk until they become foamy. Then add the remaining 100g sugar and continue whipping the egg whites until they start forming solid peaks (or if you dare, turn the bowl upside down: the mixture should not drop out).

  5. Carefully fold some of the stiff egg white into the chocolate mix. Then add the remaining egg white mixture at once, and fold until the batter is smooth. Fill the batter into the prepared cake pan and bake for about 35-40 minutes.

  6. Remove the cake from the oven and leave it to cool on a rack (in the cake pan). Once the cake cools it will fall together in the middle, which is just what we want for that crater look.

  7. Start preparing the whipped cream by whipping it until it starts to thicken. Add the vanilla sugar and continue to whip the cream until it is almost forming peaks.

  8. Spread the whipped cream evenly onto the centre of the cake. Using a sieve, sprinkle some cocoa powder over the cake for its final touch. Time to devour the chocolate goody!
