Bruschetta

Hot summer days call for refreshing finger food to accompany the weekend barbecue. Sweet tomato and garlic salsa, some fresh basil and crunchy toasted baguette!

Ingredients:

  • 1 Baguette

  • 400g Cocktail Tomatoes

  • 3 Cloves of Garlic

  • Olive Oil

  • Salt & Pepper

  • Fresh Oregano and Basil

Method:

  1. Slice up the baguette and toast the pieces until golden brown and crispy. Set aside.

  2. Cut the tomatoes into quarters. Finely chop the garlic.

  3. In a small pan, heat some olive oil on medium low heat. Add the tomatoes and garlic, and sear for 3-4 minutes. The tomatoes should not fall apart or lose their skin.

  4. Using a sieve, strain the tomatoes from excess liquid. Place some tomatoes on the crispy baguette slices and season with some salt and pepper to taste. Top off with fresh basil and/or oregano

  5. Enjoy the summer fresh finger food !
