Hot summer days call for refreshing finger food to accompany the weekend barbecue. Sweet tomato and garlic salsa, some fresh basil and crunchy toasted baguette!

Ingredients:
1 Baguette
400g Cocktail Tomatoes
3 Cloves of Garlic
Olive Oil
Salt & Pepper
Fresh Oregano and Basil
Method:
Slice up the baguette and toast the pieces until golden brown and crispy. Set aside.
Cut the tomatoes into quarters. Finely chop the garlic.
In a small pan, heat some olive oil on medium low heat. Add the tomatoes and garlic, and sear for 3-4 minutes. The tomatoes should not fall apart or lose their skin.
Using a sieve, strain the tomatoes from excess liquid. Place some tomatoes on the crispy baguette slices and season with some salt and pepper to taste. Top off with fresh basil and/or oregano
