Baba Ghanoush

Baba Ghanoush must definitely be one of my favourite dips. It comes from Lebanese food culture and can be very easily made :)

Ingredients:

  • 2 Aubergines

  • 2 Garlic cloves

  • 2 tbsp Olive Oil

  • 3 tbsp Tahini

  • 1 tbsp Yoghurt

  • 1/2 tsp Caraway Seeds

  • 1/2 tsp Pepper

  • Salt to taste

  • Fresh Mint

  • Sesame Seeds


Method:

  1. Preheat the oven to 230°C.

  2. Place the aubergines in a baking dish, pierce a few times using a kitchen knife and place in the oven for about 30-40 minutes.

  3. While still warm, slice open the aubergines lengthwise and, using a spoon, scrape out the insides. You don't need to save the aubergine skin.

  4. Place the aubergine flesh in a food processor and add the garlic, oil, tahini, and yoghurt. Blend well.

  5. Grind the caraway seeds and pepper and add to the aubergine mixture. Add a pinch of salt and blend again. Add more salt if needed, otherwise, remove the baba ghanoush from the blender and let it cool.

  6. Chop up some fresh mint leaves and sprinkle those and the sesame seeds on top to serve. Enjoy :)
