4-Ingredient Vegan Cookies

This is my first take on actually baking something vegan. I found this recipe online and was curious what it would taste like. Personally, I prefer classic cookies like the PB cookies or oat-chocolate cookies, but here's something for my vegan and dietary restricted friends out there :) The cookies were definitely easy to make and wonderfully gooey on the inside thanks to the maple syrup, but I think someone with more experience in vegan baked goods could probably do a better job :D


Ingredients (~14 cookies)

  • 240g Almond flour

  • 110g Maple Syrup

  • 1 tsp Baking Powder

  • 1 1/2 tsp Vanilla Extract


Method:

  1. Preheat the oven to 180°C.

  2. Combine all the ingredients.

  3. Lightly grease a baking dish (I used coconut oil) and place a ball of cookie batter around the size of 1 tablespoon on the dish. Using a fork, slightly press down on the cookies to create that homemade look.

  4. Bake the cookies for around 12 minutes, or until turning slightly golden brown. Leave to cool and keep in an airtight container.
